Soil(s): Balance of Granites, Schists, Limestones, Clays.

Harvest: Manual harvest.

Vinification: Direct pressing. Settling. Fermentation in temperature-controlled stainless steel vats.

S - Rosé Wine

Figari granite (far south).

Manual harvest.

Direct pressing white wine method. Fermentation with indigenous yeast strain. Aging in stainless steel vats in winter.

Appearance: Pale lemon yellow.

Nose: Fruity with aromas of white flowers, notes of lemon caviar.

Palate: Precise and sharp, ample and fruity, with a subtle fat.

Nose: Pink grapefruit, thyme, pepper, peony.

Palate: dynamism of red fruit, mineral finesse, very refreshing structure, long finish enhanced by fine bitters.

Acidity is a key sensory parameter in wine. Acids represent between 0.3% and 1% of the composition of a bottle of wine.

The main acids contained in wine are tartaric acid, malic acid (which comes from grape juice) and lactic acid. These acids are odorless and can only be detected in the mouth.

For most tasters, the acidity of wine is detected more strongly on the sides of the tongue, where it causes a sharp tingling sensation and makes us salivate. The more we salivate, the higher the acidity level of the wine.
